A: The Denver area is really getting quite culturally advanced and we have some amazing restaurants serving everything. I would say regional cuisine is pretty heavy into red meat as it's cattle country. Colorado lamb and peaches are very highly rated. Buffalo is pretty big here (and yummy) as are other game meats like elk and venison, you'll see quail at a lot of game oriented places too. The Rocky Mountain Oysters everyone refers to are a Western delicacy to be sure and everyone has to try them, but they are not oysters by any stretch. On the Boulder end of the area you'll find a lot of organic and natural foods. We're not known for BBQ, most meat is prepared pretty simply to focus on the quality of the meat. Southwest cuisine with a Mexican focus is also very big. We eat a lot of Mexican food and have a large Mexican population.
